Peanut Butter Cookies are delicious on their own, but sandwiched with a sweet creamy filling, they are heavenly.

1 batch of irresistible peanut butter cookies
1 1/2 cups creamy peanut butter
6 tablespoons unsalted butter, softened
2 tablespoons confectioners’ sugar
2 tablespoons honey
1 teaspoon pure vanilla extract
1 teaspoon kosher salt

Combine filling ingredients in a bowl and whisk together. Set aside.
Turn one cooled cookie upside-down and spread 2 teaspoons of filling to the edge.
Gently Press another cookie on top to make a sandwich.
