Green Velvet Cake and Cream Cheese Frosting

Special for Saint Patrick’s day, or anytime you want a green cake. This scratch recipe can be made any color and it will still be delicious.

Green Velvet Cake:

2 c granulated sugar
1 ½ c vegetable oil
2 eggs
2 ½ c self rising flour
2 t cocoa powder
½ (1oz) bottle green food coloring
1 t white vinegar
1 c buttermilk
1 t vanilla extract

Cream Cheese Frosting:

1 (8oz) package cream cheese
½ c (1 stick) butter, softened
1 (16oz) box confectioners’ sugar
1 c chopped pecans
1 t vanilla extract

Preheat the oven to 350 degree.  For the cake, in a large mixing bowl with an electric mixer beat the sugar and oil.  Add the eggs and beat well. In another bowl sift the flour, salt, the eggs and beat well.  In a small bowl mix the cocoa powder and the green food coloring.  Add the vinegar to this mix well.  Add this mixture to the sugar mixture.  Alternating add the flour mixture and the buttermilk to the cocoa mixture.  Mix week after each addition.  Add the vanilla and beat well.  Pour the batter into three greased vanilla and beat well.  Pour the batter into three greased and floured 8 inch cake pans.  Bake for 35 minutes.  Remove from the heat and set aside to cool.

For the frosting, make sure the cream cheese and butter are at room temperature.  In a mixing bowl with an electric mixer beat together the cream cheese and butter until fluffy.  Add the confectioners’  sugar, pecans, and vanilla.  Mix well.  Spread the frosting between the layers and over the cake.
