Fudge Filling

I use this as cupcake filling.

Fudge Filling

Ingredients

  • 1 1/3 cups marhmellow creme
  • 1 1/2 cups sugar
  • 2/3 cup evaporated milk
  • 1/4 cup butter (unsalted)
  • 1/4 tsp. salt
  • 3 cups semi-sweet chocolate chips, melted
  • 1 tsp. pure vanilla extract
  • 1/2 cup hot water

Instructions

  1. In a large heavy saucepan over medium heat, combine marshmellow creme, sugar, evaporated milk, butter and salt. Stir constantly and vigorously while bringing to a full boil and cook for 5 minutes, stiriing constantly. Remove from heat and allow to cool until “just” warm. Stir in melted chocolate until smooth. Add 1/2 cup hot water and vanilla. Stir until smooth. Cool until able to pipe into cupcake cavity. Mixture will be soft.

I love this recipe. I've only used it with dark chocolate cake but everyone loves it. this is always my go to recipe when i need fudge filling

My friend asked me to make her a chocolate cake with a chocolate fudge filling. This looks like a tasty one but I have a question - what do you mean by marshmallow creme...fluff??? Thanks!

Wow....so yummy...this is one of the best receipes I have found on this site yet. I needed it to fill a cake so I added about 2 1/2 cups of powdered sugar during the cooling process to make it a little stiffer. I also ran out of choco chips so I had to add a couple of Hersheys bars and it still came out fabulous! This is a keeper!

This was soooo yummy and made the cupcakes super moist. Everyone loves it! It is thick enough not to run off a cake but not thick enough to pipe with. I did over cook the first part (so will have to be careful next time) but I was able to save it when adding hot water and mixing it with a handheld, electric mixer for a short time.

i'm going to try this recipe for a filling for my son's 18th birthday cake, he wants chocolate cake with a chocolate filling, will update after we eat it.

I used this last weekend- and also added powdered sugar like cakebymom2 since it was for a cake filling....came out perfect! Was a little runny, but after about 30 min in fridge- this was perfect, smooth, and super yummy! Thanks!

I loved the taste but found it to be too thin for a cake filling. Reduce the water to 5 tablespoons and it will be perfect for filling or icing. Great taste!
