The scent, color, and sweetness of watermelon are reminders that summer is here. Of course we love the juice running down our arms as we eat watermelon at a sunny picnic, but here is a refined watermelon sorbet that is just as reminiscent of summer fun.
1 cup granulated sugar
½ cup water
¼ cup lemon juice
3 cups watermelon, chilled, seeded and cubed
SIMMER sugar, water, and lemon juice in a medium saucepan until sugar is dissolved.
CHILL sugar mixture until cold.
PUREE watermelon and add to chilled sugar mixture.
FREEZE in an ice cream maker, following the manufacturer’s instructions.
