Fizzing Candy Recipe & Sweet Treat Ideas

Cookies, cupcakes and cake pop treats sparkle with fizzing candy in these celebratory treats! Pop Rocks™ are a fun candy steeped in urban legend that pop and fizz in your mouth, and we think goes perfectly with fireworks and celebrations. You can find Pop Rocks ™ in most candy stores or you can make your own fizzing candy at home! Adding fizzing candy to baked creations can be tricky though, as you want to save the “fireworks” for the moment they hit your mouth. Follow our tips for adorning your favorite baked goods with a pop.
Fizzing Candy
Confectioners’ sugar
¼ cup citric acid, divided
2 cups granulated sugar
¼ cup water
⅓ cup light corn syrup
½ teaspoon flavor extract of your choice
1 teaspoon baking soda
Gel color of your choice
DUST a baking sheet with confectioners’ sugar, then sprinkle with citric acid.
BOIL granulated sugar, water and corn syrup in a medium saucepan over medium heat.
BRUSH the sides of the pan with a wet pastry brush to prevent sugar crystals forming.
COOK the mixture without stirring, to 305° F.
REMOVE from heat and cool to 275° F.
INCORPORATE flavoring, baking soda and gel color.
POUR onto prepared baking sheet.
SPRINKLE immediately with remaining citric acid.
COOL to room temperature then crush in a plastic food storage bag using a mallot.
STORE in an airtight container.
Sugar Cookies

After icing has fully dried, lightly coat the surface of the cookie with vegetable shortening and dip into fizzing candy. The candy reacts to water, so sprinkling it on the wet royal icing will activate the fizzing. To avoid this we’ve used shortening, as the candy won’t react with fat.

Where do I find Citric Acid for making Fizzing Candy?

This recipe was terrible. I think its mislabeled. It did no fizz at all and is SO sour. Very disappointed :(
