Simple and Delicious Raspberry Filling

This recipe is easy and delicious. It can be used with a variety of fresh, canned, or frozen berries. If using frozen, let thaw and drain.

Simple and Delicious Raspberry Filling

Ingredients

  • 1/2 C sugar
  • 2 T cornstarch
  • pinch nutmeg
  • 1/4 C water
  • 1 T unsalted butter
  • 1 1/2 C berries (fresh or frozen)

Instructions

  1. In a small saucepan over moderate heat combine sugar, cornstarch, nutmeg. Gradually add the water and stir. Add the butter and berries and bring to a boil stirring gently. Boil for 2 minutes or until thickened.

This is my all time favorite raspberry filling!!! I always add a few more berries, and it is always so delicious! I try to make more so we can then have it as the jelly in a PB&J sandwich! Yummo!

Thank you! I do love this. So so easy to take seeds out which I always do. After removing from heat strain into bowl through mesh strainer stirring using a spatula.

jmabaxter - yes, most fruit will have to be refrigerated.

I love this recipe! I have used it with fresh and frozen berries. Depending on client, I might add a bit more sugar. I have gotten great reviews on both raspberry and strawberry varieties.
