Soft & Fluffy Ginger Cookies

These cookies are always a huge hit!! They are nothing like a ginger snap, they are big soft and fluffy!! I love the way they make my house smell while they are baking. Yummy!!

Soft & Fluffy Ginger Cookies

Ingredients

  • 4 1/2 cups All Purpose Flour
  • 1T & 1t Ground Ginger
  • 2t Baking Soda
  • 1 1/2t Ground Cinnamon
  • 1t ground Cloves
  • 1/2t salt
  • 1 1/2 Cups Margarine or Butter softened
  • 2 Cups White Sugar
  • 2 Eggs
  • 2T Water
  • 1/2 Cup Molasses
  • 1 Cup white suagar (for coating)

Instructions

  1. Preheat Oven to 350 degrees.
  2. In medium sized bowl, sift together the flour, ginger, baking soda, cinnamon, cloves, and salt. Set aside.
  3. In a large bowl, cream together the margarine and 2 Cups of sugar until light and fluffy. Beat in the egg, and then stir in the water and molasses. Gradually stir in the sifted ingredients into the molasses mixture.
  4. Shape dough into walnut sized balls, and roll them in the 1 remaining cup of sugar. Place the cookies 2 inches apart on a parchment lined cookie sheet; DO NOT flatten them.
  5. Bake for 8-10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.
  6. You can leave these cookies the way they are or you could sprinke them eith poxdwered sugar, or you could decorating or icing them with an icing of your choice. Store these in an airtight container.
