A yummy take on a classic pumpkin roll type dessert. I decided to marry the flavor of a pumpkin cake with a maple flavored frosting, much to the delight of skeptical friends & family. Sure to be a Thanksgiving favorite!

Pumpkin Cake w/ Maple Nut Frosting

Ingredients

  • Pumpkin cake
  • 4 eggs
  • 2 c cooked pumpkin
  • 2 c flour
  • 2 c sugar
  • 1 c vegetable oil
  • 2 tsp cinnamon
  • 2 tsp baking soda
  • 1/2 tsp salt

  • Maple nut frosting/filling

  • 1/2 c unsalted butter, softened
  • 4 oz. cream cheese, softened
  • 2 1/2 c. powdered sugar
  • 1/2 c maple syrup (not the pancake kind);)
  • 3/4 c chopped walnuts

Instructions

    Cake:

  1. Combine eggs, sugar & oil. Then add rest of ingredients, mix thoroughly. Pour into two 8 inch pans bake @ 350 for apprx 35 minutes.
  2. Frosting:
  3. Cream butter & cream cheese until smooth. Add sugar & syrup, mix until smooth. Fold walnuts into frosting.
  4. Makes enough to frost & fill two 8 inch cakes.
