Lemon Sandwich Cookies

I have made these simple cookies many times, and have always found them to be a hit. The lemon flavor is very light, not overpowering.

Lemon Sandwich Cookies


  • 1 c. butter, softened
  • ½ c. sugar
  • 1 egg yolk
  • 1 tsp. vanilla
  • 2 c. all purpose flour
  • Filling:
  • ½ c. butter, softened
  • 2 c. powdered sugar
  • 2 Tbsp. lemon juice


  1. Cream butter and sugar. Beat in egg yolk and vanilla. Gradually add flour. Shape into 1 inch balls. Place 2 inches apart on ungreased baking sheets. With a glass dipped in sugar, flatten into 2 inch circles. Bake at 350° for 10-12 minutes, or until firm. Remove to racks to cool.
  2. Combine filling ingredients and spread on cooled cookies. Dip in melted chocolate and nuts if desired.
