Baby food carrot cake II

Can be made with organic ingredients. Salt in recipe is optional.

Baby food carrot cake II


  • 4 eggs
  • 2 c. sugar
  • 15 oz of 3rd foods baby carrots (I think I used 4 4 oz jars)
  • 2 c. whole-wheat flour
  • 1 tsp. baking soda
  • 1 tsp. salt
  • 2 tsp. cinnamon
  • 1 c. vegetable oil


  1. Preheat oven to 350 degrees. Combine all ingredients in mixing bowl and mix well. Spray 11×17 baking pan w/cooking spray. Pour batter into pan and bake for 30 minutes. When cool, frost with cream cheese frosting and refrigerate until ready to serve.
  2. Frosting:
  3. Beat together 1 1/2 c. powdered sugar, 1/4 c. butter, 3 oz cream cheese, and 1 tsp vanilla.
