I found this recipe for Banana icing when searching for a recipe to use some bananaâs that got dark on me before we could eat them. Now I think Iâll be happy to see the get old, this is a fantastic great tasting icing. It can be used on a banana cake, white cake or even a peanut butter cake, yum! Enjoy!
- 1/4 cup softened butter
- 1/2 cup mashed bananas
- 1/2 teaspoon lemon juice
- 1/2 teaspoo vanilla extract
- 3 1/4 cups confectioners sugar
- Cream together butter, bananas, lemon juice and vanilla. Slowly beat in confectioners sugar, adding more if needed to make a nice fluffy, spreadable icing.
Tried it on a chocolate cake with strawberry filling. Sprinkled some Crushed nuts on top. The customer loved it. I've now added it to my gormet cupcake list. Banana split cupcakes!! If you like you can also add some pineapple ice cream topping.
