Here’s another alternative for non-sweet frosting. I got the recipe from a Tres Leches cake recipe a few years ago. It originally said to add sugar, but I didn’t like the texture or taste so I experiment with gelatin and I haven’t used any other frosting since.
This recipe will frost, fill and decorate one 9×13 cake.
Dairy Whipped Frosting
- 1 quart of heavy whipping cream
- 2 packets of flavored gelatin.
- (3 packets if you want a really strong flavor)
- Simply whip the heavy whipping cream and packets of gelatin together. Start of slowly and gradually move up to a medium speed. It will take a while, but watch it constantly. Once it reaches soft peaks you can whip it at high speed for a FEW SECONDS. This is very important, if you whipped it too much, it becomes too liquidy and there is nothing you can do to fix it (I’ve learned the hard way). After mixing it at high, check it for consistency. It should form stiff peaks. Keep mixing at a high speed SECONDS AT A TIME, until it forms stiff peaks.
