Mississippi Mud Cake

My mother made this cake for me years ago and I fell in love with it’s rich chocolate and marshmallow taste.

Mississippi Mud Cake

Ingredients

  • 1/2 cup cocoa
  • 2 sticks butter
  • 4 eggs (slightly beaten)
  • 2 cups sugar
  • 1 1/2 cups all purpose flour
  • Pinch of salt
  • 1 1/2 cups chopped walnuts
  • 1 tsp vanilla
  • 1 package miniature marshmallows
  • Frosting:

  • 1 box powdered sugar
  • 1/3 cup cocoa
  • 1/2 cup milk
  • 1/2 stick softened butter not melted

Instructions

  1. Melt butter and cocoa together.
  2. Remove from heat and stir in sugar and eggs.
  3. Mix well.
  4. Add flour, salt, chopped nuts and vanilla.
  5. Mix well.
  6. Spoon batter into a well greased pan 9X13x2
  7. Bake at 350 degrees for 35-45 minutes or until done.
  8. Sprinkle marshmallows on top of warm cake.
  9. Cover with chocolate frosting.
  10. Let cool and cut into squares.
  11. Frosting Directions:
  12. Combine sugar, cocoa, butter and milk.
  13. Mix well until smooth and spread on cake.
