A yummy strawberry cream cheese filling for cakes that can also be used as a cream pie filling.
- 8 oz. cream cheese
- 1/4 cup sugar
- 1 teaspoon vanilla
- 1 cup mashed strawberries (frozen work great… just defrost first and mash with food processor)
- 1 cup heavy cream
- 1/4 cup confectioners sugar
Beat cream cheese, sugar and vanilla until smooth. Stir in strawberries.
In separate bowl, beat cream until it begins to thicken. Gradually add confectioners sugar and beat until stiff peaks form.
Fold into cream cheese mixture.
At first, I thought the one cup of mashed strawberries would make the filling too loose and make the cake slide. It held together well.
