Oreo Cupcakes

I posted a picture of these cupcakes in my photos. I got the recipe from an app on my phone. I love it when you make a recipe and they turn out just like the photo! These are super yummy and I’ve gotten rave reviews! I will say that the recipe is a little different than they way I’ve made homemade batter before, but they’ve turned out everytime.

Ingredients

  • 1 stick of unsalted butter, softened
  • 1 cup of milk (I used buttermilk)
  • 2 tsp. vanilla
  • 2 1/4 cups of flour
  • 1 tsp. baking powder
  • 1/2 tsp. salt
  • 1 2/3 cup sugar
  • 3 large egg whites brought to room temperature (I take them out of the fridge and put them in warm water for a few minutes)
  • 1 pkg. Oreo Cookies
  • Icing:
  • 5 Tblsp. flour
  • 1 cup milk
  • 1 tsp. vanilla
  • 1 cup (2 sticks) butter softened
  • 1 cup sugar (regular, not powdered)

Instructions

  1. Preheat over to 350. Insert cupcake liners in a regular muffin pan. Twist apart 24 oreos. Place the wafer with filling on it, filling side up in the bottom of each liner. Take the remaining wafers and cut them in half with a sharp knife, these will be used for garnishing later. If some break, don’t worry, you can crush them with the remaining oreos. Crush remaining oreos and set aside. In a large bowl, cream the butter until fluffy, about 3-5 minutes. Add the mild and vanilla and mix to combine. In a separate bowl, mix together the flowr, baking powder, and salt. Add the dry ingredients to butter mixture. Mix until integrated. Stir in sugar. With and exectric mixer on low speed, beat for 30 seconds. Turn the mixer up to medium speed and beat for 2 minutes. Add the egg whites. Beat for 2 more minutes. Stir in crushed oreos. I use an ice cream scoop to fill the liners and it usually comes out to a perfect 24 cupcakes. Bake for 20 minutes or until a toothpick comes out clean.

For the icing, In a small saucepan, whisk the flour into milk and heat, stirring constantly, until it thickens. It took about 5 minutes on high. Be careful not to burn it. Remove form heat and let it cool completely. If you are unpatient like I am, you can take the pan and place it over an ice bath. It will cool in 10 minutes or so. You might want to stir it a few times. This mixture must be completely cooled in order to work. Cream the butter and sugar together until light and fluffy approx. 3-5 minutes. Then add the cooled milk/flour mixture, and vanilla. Beat until it all combines and resembles whipped cream. Make sure to scrape down sides ocassionally. This tastes very light considering it has 2 sticks of butter. It really resembles whipped cream.

Pipe the icing on each cupcake, place oreo half in icing at an angle, you may also dust some real fine oreo crumbs over the top. Enjoy
