I met a bride who wanted a lilikoi (which is Hawaiian for passion fruit) cake filling. So began the odyssey – We have a rather large Oriental supermarket here and I found different fruit concentrates like Passion fruit, guava, Strawberry etc. The concentrates are thick like corn syrup and are sweet. The passion fruit has sugar but its still on the tart/tangy side. Hope you enjoy it!
1 8 oz package cream cheese (softened)
- 1/2 cup passion fruit concentrate
- 2-3 tablespoons powdered sugar
- 1 1/2 cups heavy whipping cream
In a medium sized bowl, cream together the cream cheese and passion fruit concentrate till well combined. In a separate bowl, use an electric mixer and beat the cream on high speed until it is thick and holds a peak when you take the beater out. Beat in the powdered sugar, being sure it is entirely mixed in. Stir about 1/3 of the whipped cream into the passion fruit mixture until combined, then fold the passion fruit-cream mixture into the remaining whipped cream.
*The powdered sugar is to your taste – sometimes I don’t add it at all if the cake this mousse is paired with is very sweet. The tartness of the passion fruit evens it out
