This goes great with most cake, but my favorite is chocolate cherry cake.
- 1 C heavy cream
- 1 C (8oz) dark chocolate pieces (cut small)
- 1 C cream cheese
- 1-1 1/2 C chopped maraschino cherries
Heat cream in microwaveable bowl for about 2 1/2 minutes.
Add chocolate pieces and let sit for 3-5 minutes
Whisk mixture till thick and consistent, then set aside. Now you have ganache.
Put cream cheese (room temp if possible) into mixer bowl with whip attachment
Add still warm ganache (will help to soften the cream cheese), and the chopped cherries.
Whip until fully combined, refrigerate. You may need to add some cherry juice from the maraschino jar to get the consistency to your liking.
