I have tried a couple of the other enhanced cake mix recipes on here, and for some reason none of them really did it for me. Most contained sour cream, and my cake just didn’t seem to have the flavor I wanted. So I kind of mixed a few together to see what I could come up with, and this has been my winner for a while. It’s dense enough to stand up to the weight of buttercream and fondant, but still has a nice light feeling when you eat it.
- 1 Box Cake mix (preferably Duncan Hines)
- 1 Box pudding mix*
- 1 stick softened butter (1/2 cup)
- 4 eggs
- 1/3 c. vegetable oil
- 1c. whole milk
- 1 tsp. Vanilla
*Flavor suggestions: With any chocolate mix, add chocolate pudding. Yellow cake mix, vanilla or banana work well. White cake mix, you can get away with just about anything. Strawberry, vanilla, banana… they all create light flavors without being too overpowering.
- Combine Pudding and cake mix. Stir until powder is all mixed together. Add butter, eggs, oil, and milk, and combine until batter is smooth and even, almost a pudding like consistency. Bake as directed on box.
