LIGHT CHERRY COFFEE CAKE

Sooo Good!

Ingredients

  • 1 box of yellow cake mix
  • 1 can of diet 7up
  • 1 can of light & fruity cherry pie filling
  • Icing:

  • 1 cup of icing sugar
  • 1/4 tsp vanilla
  • 5 tsp water

Instructions

  1. Pour yellow cake mix into bowl
    Add entire can of diet 7up (nothing else)
    Mix for 3mins
    Pour cake mix into 13×9 cake pan
    Spoon cherries and filling ontop of batter (use just al little more then half of the can)
    Gently fold cherries into batter (not touching bottom of pan)
    Bake @ 325 for 30-35mins checking after 30mins

Icing:
Blend ingredients together and pour over warm cake

Full of artificial sweetener. Why not use regular 7-Up and some eggs and oil? Also, for coffee cake with cherries, add a cup of chopped pecans.  The sugar topping is not necessary. Just sieve a little powdered sugar on top. Could also sprinkle more chopped pecans on top.  We're using too much artificial sweetener in our food.

You could label this a vegan cake and use an egg substitute if that's what you want. I'd still add the nuts.
