A wonderfully moist gluten free gingerbread-Enjoy!
Makes 12
Ingredients
1 1/3 cup white rice flour
1/3 cup cornstarch
1 1/4 teaspoons baking soda
1 1/2 teaspoons ginger
3/4 teaspoon cinnamon
1/2 teaspoon xanthan gum
1/2 cup sugar
1/2 cup molasses
1 egg
1/2 cup vegetable oil
1/2 cup boiling water
Instructions
1. Mix dry ingredients in a large bowl.
2. Add molasses and the egg.
3. Pour in oil and boiling water and beat until smooth.
4. Pour into a greased 9×9 inch pan and bake at 350 for 35-40 minutes.
5. Enjoy!
Note: Can easily be doubled or tripled.
Absolutely delicious!!! I baked it in a 9" springform pan, and it turned out wonderfully! Will definately make again and again.
