Pink Lemonade Cake

This cake is perfect for a refreshing summertime treat! Goes well with anything!

Ingredients

  • 1 box lemon Cake Mix
  • 1/2 Container frozem pink lemonade
  • 1 can Condensed Milk
  • 1 large container Cool Whip
  • 4-5 drops of red food coloring

1. Bake the cake in 2 round pans.  Bake cake according to box directions. Cool.
2. Cut each layer in half so that you end up with 4 layers.
3. Use the mixer to whip up the Cool Whip, Condensed Milk, and Frozen pink Lemonade.  Add the food coloring until it reaches a faint pink color. You don’t want it VERY pink, just subtle. Whip until the frosting begins to form peaks.  4. Frost the layers and then dump the remianing frosting over the top and spreas it down the sides.
5. Garnish with fresh mint leaves and strawberries or cherries (More lemon as the garnish is overkill.)  Keep covered in the refrigerator untill time to serve.

Both are the small cans. Since you only need a 1/2 can of pink lemonade, I just made a 1/2 version of the drink to keep in the fridge...no need to waste it.

I can't get the frosting to thicken up. It is like soup and I didn't even use a full 1/2 can of the small can of lemonade. What am I doing wrong?

I even tried whipping it for a very long time and nothing, just got worse and worse. I even tried putting it in the fridge for a while and in the freezer, nothing helped.

I love this recipe and most importantly everyone at my husband's work loves it too!!! It's very tasty and perfect for summertime. I keep getting more requests to make it!

Why have a recipe that includes a cake box mix? I looked forward to noting the pink lemonade recipe until it said about cake box mix? :( I've seen this a lot in American recipes it doesn't make sense to us in the UK, we make everything from scratch. Thanks anyway. X

Ugh...there is already a Pink Lemonade boxed cake mix...I make all my cakes from scratch...it's just as easy to add lemonade to that...sorry, but I think I'll stick with mine ;)

I have never written a comment on CC before but I feel these rude comments should not be over looked.   Why are people verbally attacking this women simply for contributing to this forum? I thought this forum was where people could share their creations and recipes and get back positive feedback not criticism. I would be ashamed of myself if I put down other people because they don't do things the same as me. Some people like scratch baking and some don't care if the cake is from a box. They simply want a cake that taste and look good. I personally do both scratch and box cake and people love both. I always felt that bakers and cake decorators were people who have a passion for cakes be it decorating or baking or both and enjoy sharing their creation with others to make them feel special. Isn't this why we do it? We have a desire to create and make people smile with our creations. With all that being said, make this forum a place where we uplift one another and make each other feel special about themselves as we would do for those who receive our cake creations.

I agree! Whether from scratch or box is a preference. I've found delicious recipes for both, but when I want to be sure everything turns out perfect, I have to admit, my favorite recipes are "doctored up" box mixes. And they are delicious. Thanks for the recipe! (For those who won't use a mix the polite thing to do is just quietly pass over this recipe & let the rest of us enjoy it.)

OMG. I am shocked to see the negative response given towards a fellow baker. I wonder how you would take criticism from someone who didn't like scratch cakes? The nerve of you.  Have you ever considered that some people start off with box cakes then change to scratch?  This is how i started my 5 year old granddaughter who is now 12 and baking cakes from scratch.  I believe negative opinions should be kept off this forum. She never said this was a challenge cake or scratch cake.  Her intentions were to show a nice, easy, fun recipe to make.

 Hmmmm I've read it all, though i still prefer things from scratch"and i mean all food pastries" a quick fix snack is not a bad thing. Around the world their are critics, some we dont want to cross, these things build up a person or crush them dont allow the latter. Though we state or preferences be considerate of others always. Thank much for posting!!

Sometimes bakers want a quick and easy cake that tastes good. Not everyone has time to make a cake from scratch and this is a good way for beginners to start.

UK people are rude indeed. They have big attitudes too. It's just ashame that they think they are better than something they don't understand.

How fun! I love pink lemonade! I usually make my cakes from scratch but will defiantly try this. Cake is cake in my book! Thank you for the recipe!!
