Banana Bread with Caramel

This is the first time I tried banana bread with caramel and I can’t tell you how great it smell when it got out from my oven. It’s a good snack to cater for any occasions and I hope you like this recipe I am sharing.

Ingredients

  • 1. 3 eggs
  • 2. 3 mashed bananas (very soft)
  • 3. 7 Tbsp – unsalted butter
  • 4. 2/3 Tbsp – sugar
  • 5. Few drops of vanilla essence-not too much (if u don’t have it…just ignore it but the smell is better with vanilla essence)
  • 6. 1 1/4 cup – self-rising flour (sieved)
  • 7. 1/4 teaspoon baking soda
  • 8. ½ cup of Walnuts – chopped
  • 9. 5 Tbsp of caramel(as topping)
  • 10. 3 Tbsp of Choc Chips(optional)

Instructions

  1. 1) Melt the butter in microwave before adding in sugar – Mix them with mixer
    2) Add whisked eggs into liquid ingredient above
    3) Sieve self-raising flour and baking soda together
    4) Add walnuts into flour
    5) Fold in flours & mashed banana (don’t use hand mixer) alternatively into liquid ingredient
    6) Pour to baking tin (loaf) or any pan which is lined/greased
    7) Spread caramel on top of batter evenly and sprinkle some choc chips
    8) Bake 180˚C or 350˚F for about 1 hour or until brown (check with toothpick)

Did you mean 2/3 tbsp of sugar? Seems like it would be too little, but 2/3 cup sounds right. Just asking.
