This recipe is free of animal products. I’ve used this recipe in eggless Lemon Meringue Pie, Key Lime pie and for cake fillings.
- 1/4 cup lime juice (or lemon)
- 2 ½ cups soymilk
- 1 cup sugar
- 5 Tbsp cornstarch
- 2 tsp lime (or lemon) zest (washed well)
- Whip all ingredients together in saucepan, and heat over med, stir constantly until thick and creamy. Cool to room temp before using.
Approx: 8 servings
Can you use regular milk instead of soy?

Does this filling crust well? If you use it for a cake filling would you be able to use it to crumb coat as well? TH Thanks:)
I used regular milk and it turned out just fine.
