Rich Chocolate Mud Cake
Pre-heat Oven to 160o C (150o C Fan forced)
line base and sides of a 24 cm round pan with glad bake
Ingredients
- 250g milk choc buds
- 250g butter
- 3/4 cup really good perculated mocha kenya coffee
- 325g plain flour
- 30g cocoa powder
- 1/2 tspn bicarb
- 550g castor sugar
- 4 lge eggs
- 2tbspn olive oil
- 1tspn vanilla extract
- 125 ml buttermilk
Instructions

Place choc, butter & coffee in lge saucepan over low heat stirring occasionally. When choc and butter have melted remove from heat and allow to cool to room temp.
Sift the flour , cocoa and bicarb together in lge bowl. Add Castor sugar and stir with a whisk till well combined.
In a medium bowl place eggs, milk, oil and vanilla and whisk.
Add the egg mixture to the flour mix then add the choc mix to the flour and egg mix in three batches stirring till well combined after each addition.
Pour immediately into pan and straight into oven for approx 1 hr 15 mins.
Skewer in center to see if cooked through.

its about two inches, dont overload the pan as this rises and escapes all over your oven!!
can anyone convert this to cups?
How does this cake handle carving, for like a topsy turvy cake? I don't think the Hershey's cake (the one printed on their cocoa powder box) would work! It sound yummy! I cant wait to try it :D You may pm me if you like!
Has anyone in the U.S. tried this recipe, wondering about conversions (yes i'm math challenged lol) - would love to try it but the conversions are freaking me out.

How do I know how much to make for a 6" 9" and 12" cheers I'm trying topsy turfy cake
So this recipe would do one layer for a 9" round pan? Is that right? Which would mean it makes about 5.5 cups?
