I couldnt find a recipe for a coconut filling that I was happy with so I came up with one of my own. This is a very versatile recipe and can be adapted easily to suit different tastes/amounts needed, not to mention its SUPER easy! This recipe filled an 8 inch and a 6 inch cake. Enjoy!
- 4 vanilla snack packs of pudding
- 1 Tbl coconut extract (add more for a more intense flavor)
- 3/4 cup shredded coconut (again add more or less to taste)
- Mix all ingredients together and use or refrigerate.
Instant Vanilla Pudding made with coconut milk instead of milk works great. Reduce the amount of milk a bit to make a thicker pudding.
would this be good for a coconut cake and what kind of icing would you use ..sorry I'm new at this
