I couldnt find a recipe for a coconut filling that I was happy with so I came up with one of my own. This is a very versatile recipe and can be adapted easily to suit different tastes/amounts needed, not to mention its SUPER easy! This recipe filled an 8 inch and a 6 inch cake. Enjoy!

Ingredients

  • 4 vanilla snack packs of pudding
  • 1 Tbl coconut extract (add more for a more intense flavor)
  • 3/4 cup shredded coconut (again add more or less to taste)

Instructions

    Mix all ingredients together and use or refrigerate.

Instant Vanilla Pudding made with coconut milk instead of milk works great. Reduce the amount of milk a bit to make a thicker pudding.

would this be good for a coconut cake and what kind of icing would you use ..sorry I'm new at this
