This is an old family recipe, and it is very moist!
Banana Oatmeal Bread
- 1/2 cup shortening
- 1 cup white sugar
- 2 eggs, beaten
- 1/2 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1 cup quick cooking oats
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 1 1/2 cups mashed bananas
- 1/4 cup milk
- 1/2 cup chopped raisins (optional)
1 Preheat oven to 350 degrees F (175 degrees C). Grease one 9Ã5 inch loaf pan and set aside.
2 Cream together the shortening and sugar. Add eggs and vanilla, beat until fluffy.
3 Sift together the flour, oatmeal, baking soda, salt and cinnamon. Add dry ingredients alternately with bananas and milk. Mix until blended.
4 Fold in raisins and pour into prepared pan. Bake for 50 to 60 minutes; remove from oven and cover for 5 minutes.
