I tried this on a pina colada cake awhile back because I couldn\ât find a cream cheese pineapple recipe, so I threw a couple simple ingredients together and voila! No cooking required. Everyone loved it (or at least they said they did lol) so I used it on another pina colada cake and still got raves. Real quick n simple.
8oz brick of cream cheese
- 8oz of crushed pineapple w/ juice (I use Dole in 100% pineapple juice)
- 3 to 5 cups of powdered sugar, depending on the taste and consistency you like so taste as you go.
- 1. Soften the cream cheese and throw it in the mixer on low speed
2. Add the pineapple to the cream cheese, continue mixing on low speed
3. Add powdered sugar a cup at a time until you get the taste and consistency you want, scrape the mixing bowl as you go so everything is incorporated. Feel free to up the speed on the mixer for a minute or two to get everything well meshed.

I've done something similar to this but instead of adding sugar I'm a diabetic I've added sugar free instant pudding and it's yummy.
i tried something simular to this for my sister BDay cake and it looked like cottage cheese , so i had to start over(:

Ok I tried this one. Taste great however I think the receipe is wrong. I used 5 cups of powdered sugar it was still liquid as soup even though I had drained off most of pinapple juice. Are you sure 5 cups? I actual added 5 lbs of powdered sugar just to get it to thick up. I am using in a pineapple cake with coconut flavored BC icing. And because of the crushed pineapple in filling it clogs the icing tips.
I had the same issues as Miss Evies. I added about two pounds of powdered sugar, and it is still the consistency of icing, not a filling. I followed the directions and didn't drain the pineapple, and wonder if it would have been better had I done so. But the amount of powdered sugar this recipe calls for definitely doesn't work for a filling consistency.
I drained the pineapple and used two pounds of powdered sugar and it is still very soupy. What can I use to thicken this up without adding any more sugar? Will flour or cornstarch disolved in a little bit of juice work?
I made this tonight and also came up with pineapple soup. I drained the pineapple and used 2 lbs. of powdered sugar. I'm not sure what else can be done to make it thicker.
So what if i want to add strawberries?
i would add some instant pudding to thicken it up and drain the pineapple too.
