Lemon Poke Cake II

This is a moist lemony cake. It is called a poke cake because you poke holes in it to absorb the glaze. If you want, you can serve this with vanilla ice cream or whipped topping.

Lemon Poke Cake II


  • 1 (18.25 ounce) package yellow cake mix
  • 1 (3.4 ounce) package instant lemon pudding mix
  • 3/4 cup water
  • 1/2 cup vegetable oil
  • 4 eggs
  • 1/3 cup lemon juice
  • 2 cups confectioners sugar


1 Preheat oven to 350 degrees F (175 degrees C).Grease and flour a 9×13 inch pan.

2 In a large bowl, stir together the cake mix and instant pudding. Add the water, oil and eggs, mix until smooth and well blended. Spread batter evenly into the prepared pan.

3 Bake for 40 to45 minutes in the preheated oven, until a toothpick inserted comes out clean. While the cake is still hot, poke holes in the top with a fork. In a small bowl, mix togehter the lemon juice and confectioners sugar until smooth. Pour over hot cake.
