Pros: Turns my buttercream white

Cons: Makes icing a strange texture and not easy to smooth, clumps in the bottle, smells of chemicals

I have to use a lot of it to turn my buttercream white (I use only butter, no crisco).  It makes the icing almost curdly and almost impossible to smooth nicely.  There is always a huge clump in the bottom of the bottle, even though I shake it.  I feel  almost as though I'm adding an inedible paint to my icing, based on the texture and smell.  It serves its purpose in whitening, but I'm not fond of it.

Pros: I love this in buttercream

Cons: you have to use a whole bottle.

I absolutely love this when working with wedding cakes where the client wants buttercream.  It will not be pure white but better than offwhite.  My customers have been happy with the results so I keep it stocked.
