Bourgonsgirl - the Viva method is when you use a plain white / no pattern Viva paper towel to smooth the frosting. Wait until the frosting crusts a bit, then lay the paper towel over the cake / cupcake and smooth with a spatula or fondant smoother. It works great. You will see others on this board speak of this method and also the Melvira method.
