Seashell Anniversary Cake

Seashell anniversary cake for tomorrow. 12" and 8" with pineapple filling on large, strawberry on small. Iced in Italian meringue buttercream. Fondant waves and gumpaste seashells.

I remember you talking about this cake. VERY NICE JOB!!!!! I love how you did the waves with the fondant. I bet they loved it.

oh my gosh, shirley, this is gorgeous! it has so many elegant touches to it. i LOVe the waves and the really unique shells., not to mention your PERFECTLY smooth icing.

Thanks Cyndi. I spend a lot of time smoothing icing but the Italian meringue is very nice to work with. I smooth as much as possible, put the cake in the freezer for about 10 minutes, then heat a chocolate scraper or wallpaper scraper till just barely warm over a stove burner and finish smoothing the icing.
