Marzipan Forest Cake (from Martha Stewart Weddings)

I have been looking forward to this cake order for months! I had never used marzipan to sculpt before, but it was so easy! It tints really quickly, shapes well, keeps it's form beautifully and dries semi-hard overnight. I will definitely be using it all the time now for my decorating.

The only thing I changed was instead of making the mushroom stems from fragile sticks of gumpaste, I used toothpicks soaked in coffee then dried out. Easy!

This cake was from last year's Martha Weddings magazine issue.

Yes, those ladybugs are my favourite! The bride asked for 4 of them on the cake, one on each tier...she said they signify good fortune?

Great job!!! You should be proud - it came out fantastic! Another idea for doing mushrooms (if you're interested) is out of meringue. The tops and stems are piped separate, dried in the oven and "glued" together w/melted chocolate. Dust them w/cocoa. Plus, they taste great!
