I put them on the cupcake after. I use a super crusting buttercream (all crisco + meranque (sp?) powder) and let the roses air dry overnight. That way I can handle them easily. I smear some green buttercream on the cupcake and then press the rose on. For the roses that will be more angled, I secure them with a toothpick. Then I store the whole bouquet in the fridge. I try to have it in there at least six hours before delivering!
