Hey Beany! I usually mould it all in one piece. The best things to cast are things that have flat bottoms like fridge magnets. With this the top horse is only half a horse for the body then for the head part I cut the mould and opened it upand carefully stuffed the icing in closed it up the carefully opened the mould and pulled the icing out. It got a little deformed so I pressed it back into shape the best I could and dried it with a bit of sponge under it so it looked like the head was turned.
For the horse heads I cast the whole horses head then cut the mould in half at an angle so the back of each head was flat but so I still had the two ears then I just stuffed it with fondant and carefully pulled it out and put it flat on the bench to dry a bit. I think that my description here may be hard to understand, soooo hard to put into writing what I did!
socake, can I please ask you a question about using casting gel? Do you mould the head section first, and then the bottom? Or do you mould in two halves, as a line down the body? I would really appreciate any help, pleeaase?

I made my own mould using food grade casting gel then just pushed the fondant in then painted the hair and eyes!

What a great cake. I love the idea of the matching cupcakes too. I'm sure this was a huge hit!
