Mystic, I added the cocoa as I was adding the powdered sugar, that may be why it did not get too dry.

Mystic, this was the first time I had made chocolate MMF. Since it was a display cake I was not too concerned about the taste. I melted 1 unsweetened square of chocolate and added it to the small recipe of MMF. Then I kept adding cocoa powder until it was the color I wanted. I tasted it, and it tasted really good! Not bitter at all. So, just keep adding that cocoa powder until you get the color you want.
