I have been experimenting with different cake flavors, fillings and frostings... I do make everything from scratch and the other day, I decided to try a "hummingbird" style cake the batter contains bananas, nuts, pineapple, coconut etc...(probably not something I would make and take to a function because of all the possible allergies-cocnut, nuts, pineapple are common allergies now) but thankfully no one is my household has any allergies...so I made it for my hubby. Turned out amazing tasting. I added my homemade cream cheese frosting, toasted coconut around the outside and toasted pecans on top. I used 2 9" round pans, cut each round in half, then filled with cream cheese so it looked beautiful when sliced.
