well I'm not sure if its a real secret.......but the first step after baking is freezing the cake, (be sure to poke several holes in the cake before you ice it or the icing will crack) then I just ice it.....the icing starts to freeze which makes it very easy to smooth with my 12" spatula, or sometimes I use a fondant roller. Hope this helps everyone that hasn't tryed this before!
