Had a left over single layer of Coconut cake from the wedding cake I did a couple of weeks ago. It that had broke in 1/2 when I was flipping it onto the cooling rack, I had remade another one for the wedding cake and wrapped this one up in the freezer until I could figure out what to do with it. Earlier this week a co-worker was having a birthday so I offered to bring in the cake.
