A friend of mine really likes eclairs so I made them with a different spin....as cupcakes. :o) These are traditional style eclairs and I made all the components from scratch. The 'cupcake' is pate a choux baked in a cupcake liner. Then I filled with vanilla bean pastry cream and dipped them in a chocolate glaze. I finished them off with a drizzle of white chocolate. Yum! I think I would make these in mini cupcake size, rather than standard size, next time since these were pretty huge.
