Maria's 80th Birthday

This cake was a variation on the Black Forest gateaux theme. It had 12 layers, including three 12 inch round dutch chocolate kirsch-infused cake layers, three layers of dark chocolate ganache, a layer of cherry/choc mousse, belgian chocolate buttercream, a cherry ripe chpocolate cookie base, cherry brandy conserve, sour morello cherries in thickened syrup, and topped with fresh whipped cream, grated belgian chocolate and toasted sliced almonds. The plaque and roses were made from white chocolate clay with piped ganache inscription that says "Happy 80th Birthday Maria" in Polish. Also - an embossed heart dark chocolate collar with whipped ganache base border. I challenged myself with this one - using no recipes! TFL :-)
