Beach Wedding

This is the second wedding cake that I made since I started my baking/decorating career last year. Client requested for a beach-themed cake for their wedding which will be celebrated on a yacht. So I collected ideas from the web and decided to go with an Ice blue and white color with beach/sea stuff made from molded chocolate. I used Satin Ice fondant for the cake cover and what a disaster!! I am used to covering all my cakes with MMF but this time I decided to go with the SI fondant since I wanted the cake to have an elegant look. I have read great reviews about Satin Ice so I decided to go for it. But when I started using it, I found out that it was too soft to handle and when I put it to cover my cake, it started ripping off the edges so I smooth it out and then it was ok. The next morning when I checked on the cake, I saw that the top tier has cracked here and there, the middle layer was completely ripped off and the supposed-to-be waves just melted. The base tier was so wet and sticky and has bubbles all over. Then I realized I must have rolled the fondant too thin and the cake was too moist (from the freezer), so It left me no choice but to redo the covering all over again!
