I made these cupcakes for a work celebration in honor of St. Paddy's Day. I decorated them as a pot of gold with the rainbow inside. I used a box of white cake mix, seperated the batter into six bowls, tinted with the colors of the rainbow then piped a small amount of each colored batter into the cups and baked them. I decorated the tops with a simple vanilla buttercream to look like gold coins & sprinkled with gold disco dust for sparkle. Eventhough I used a boxed cake mix, everyone thought they were delicious!
