A Traditional Swedish Princess Cake on Cake Central

This was a first-time, trial run on a traditional Swedish Princess Cake (torte). I had not covered a cake in marzipan befpre, so had way too much to learn on this one! It is composed of a 9" Swedish cake made with potato flour, split into three layers; lightly coated with raspberry jam, filled with a custard pastry cream, and then topped with whipped cream before covering with a thin layer of marzipan. We're going to serve it for a neighborhood dinner tomorrow night, where we can count on honest, critical feedback. We're preparing for the wedding celebration of a friend to a Swedish gentleman. They both love the Princess Cakes that they buy at Ikea. Hopefully this one will be as good or better. Stay tuned for a photo of the real deal in about a month.
