This was a birthday cake for my stepdad, who is a UNC fan. He also loves coconut cake, so I combined the 2 in a simple 8" cake. It had to be transported 2 hours, up and down a mountain, so I didn't want anything that could fall over. It was coconut cake with coconut cream filling and coconut icing. He loved it.
