This cake is double chocolate fudge with raspberry filling, covered with chocolate fondant. It was a really hot on the day of my last class, and I had to drive an hour and a half to get there in a car with no A/C. That meant that my cake was nearly melting by the time I got there, and I had to deal with some air bubbles trapped under the fondant. Still, we managed to salvage it. Our instructor wanted us to demonstrate several techniques learned in class, and include at least one gumpaste flower. I chose not to do any of the cakes in the course book, since I wanted something more manly that I could use for Father's Day. This is the result.
