Dolphin Wedding Cake

This cake is 3 tiers, the bottom tier is butter white cake alternated with marble (butter white and hershey's chocolate cake) the filling is Irish cream cream and the top filling is Irish cream and a layer of chocolate ganache... the second tier is alternated also only it has Hershey's chocoate alternated with marble and the top tier is the same, the fillings also are the same in the same sequence... The cake is covered in rich buttercream and overlaid with marshmallow fondant which is marblized... the flowers are all gumpaste which have been airbrushed.. the cake topper is handblown sugar dolphins and hearts which have been airbrushed, the roses are pulled sugar roses which have been also lightly airbrushed... the whole cake was airbrushed with a light layer of Pearl shimmer and the flowers were accented with piping gel togive the 'water drop-dewy' look... all the gems are sugar which I casted from homemade molds .... the piping is royal icing done in a extension technique and the picture is a photo of the couple which I printed on sugar paper with food coloring cartridges.... hmmm... I think I pretty much covered it all.... I hope you enjoy it... it was quite a task, I actually broke 4 dolphins in the creation of this topper and spent the better half of Friday night having to create 2 new ones (which I was NOT happy about! If you happen to hear a LOUD 'F-Bomb' - um.... that was ME!)... but the bride loved it - so it was worth it in the end! ENJOY!
