This is my first wedding cake. Had 2 weeks notice so didn't really have enough time to panic too much!! The bottom and top layer are milk choc fudge cake. The middle is white chocolate mud. All layers are filled with ganache. My icing has let me down again!! After many discussions here on CC re IMBC I decided to go with a shortening based icing due to the hot weather. My problem was I have never worked with a non crusting icing before and I just couldn't get it smooth. The more I tried the worse it got! The flowers are gum paste. I think this will be my first and only wedding cake :) !!
