I made this for my son's first birthday. I was pretty disappointed in the way the whole thing turned out. It was swiss chocolate & chocolate fudge cake with whipped mint filling and ganache. I used white chocolate mint buttercream to ice with. It was very hard to keep the consistency right. Everyone loved the cake, but I guess we're all our own worst critic. There was also a snowflake cake for him to smash up.
