This cake I made for my Pastor's birthday. And with us having the Best Pastor in the whole world, I really wanted this cake to be extra special, but not to extravagant. Our Pastor is a Old Fashion Bible believing/ teaching Pastor who like things Simple and To the point. So that is how and why I decided to do a pretty plain open bible cake, with his life verse, and a plain wooden cross on it. I thought it would be pretty simple to make a cake of an open book....I was Wrong! But after 2 days of "final adjustments" this is what I had. Also My Pastor and family are trying to eat healthier, so I did my best to make this cake as healthy/low fat as a cake could be. I used unsweetened applesauce in place of the eggs for the cake. It had a cheesecake filling in between the layers, made with orange juice, and minimarshmallows, with NO sugar added to the filling. The icing I used reduced fat cream , and mini marshmallows to get the creamy, not so sweet icing, and the right consistency. I made my own MM fondant, and homemade royal icing to write with.
