This is the first cake I have made for someone with allergies. Totally dairy free. Had trouble with the icing as it wouldn't crust - just couldn't get it smooth! The cake is chocolate with MMF decorations. When I made the icing I added almond essence (following the recipe). When the lady came to pick up she also informed me that her daughter had a nut allergy!! Would have been nice to know this earlier!
